Guided fishing - what kind of fishing do you want to do? There are charter boats that take you out on Yellowstone Lake, but fishing on the Lake has not been good (see a thread here started on 4/19/08, and note that that post really didn't get any "bites" an charter boat recommendations). THere are shops in all the gateway communities that offer "walk and wade" trips on rivers and streams; they cater to fly fishers but I suppose they guide for spin fishermen as well. You might want to check the fishing regulations on the NPS' Yellowstone Park site for the rules they have; bait fishing is allowed on only a few streams and then by youths only, if I remember right.
Wildlife watching - I'd keep my $ and pay attention to the information on this board. Good luck getting your young ones up early -- however, YNP at 6:00 a.m. is really, really neat.
